Kerala, otherwise known as God's own country, has a long coastline and bountiful coconut, fresh seafood, and abundance of spices, in particular pepper corn. This sauce is a great example of home cooking using local ingredients to obtain fresh vibrant flavours; hot from the pepper, sweet through the coconut milk, spicy from the mustard & chillies, sour from the tamarind and fresh with the curry leaves - this sauce has it all.

 

Kerala curry is probably one of the most complex combinations of spices and tastes to get right, but when it is right, it hit’s the spot like very few things do. An extremely versatile sauce, works just as well with oily or white fish, chicken or vegetables.'
